This is a typical high altitude washed Ethiopian, it's quite delicate and high in acidity and sweetness because of the altitude and it is very fruit forward because of the location.
The Chire district in Sidamo grows coffee at altitudes of 1950-2000masl, by 700 small holder farmers. Most of these farmers produce coffee on a farm with an average size of only 2 hectares per farmer.
This lot is fully washed and dried on African beds for 12-15 days. In the daytime the cherries are raked to ensure a consistent drying process. In the day, it is covered from 12-3pm, to protect the coffee from the hot sun. It is covered overnight to protect it from rainfall and moisture.
This is a single day lot so it is much more uniform in processing and therefore produces a cleaner taste profile.
