Roasters Note: This is our first offering from Timor-Leste, it's a surprisingly acidic and citrus forward cup reminiscent of a typica from central America more than South East Asia.
This coffee is sourced from a well regarded social enterprise exporter called Raw Material. As a company they return 100% of profits to producing countries through community programs and premiums.
In April 2018 they built their first custom wet mill in Timor-Leste: the Atsabe Community Wet Mill. Farmers from local villages bring it to this wet mill for processing and preparation for export. This lot is the washed process lot from the Laclo village. The village only has 500 families as members and up to 150 of them produce coffee.
This coffee is fermented for 18 hours before being dried for 25 days on raised beds which gives it a high flavour uniformity making it easy to brew.
