Roasters Note: We never thought we’d do decaf but after cupping this we had to have it. It has a lot of processing flavours which make it super versatile when brewing it.
Background:
This coffee is processed using the “natural“ sugarcane ethyl acetate method. What this means is that it is soaked in sugarcane infused water repeatedly to extract the caffeine. This also impacts a sweeter cup profile and is well complemented by its 15 hr dry fermentation pre-soak.
The overwhelming sweetness and acidity still remain even when the beans look oily due to more rapid degradation of the cell walls because of the caffeine extraction.
